The Story Behind the Sauce
I love sauces from Belize. The balance of carrot and habanero is spectacular, and many of the hotter sauces I'd enjoyed over the years had that combination.  So with my 2nd sauce, Orange Label, I set out to make something similar, but with a twist. 
I found that the citrusy top note of the habanero could be a bit overbearing, and I wanted to balance that with an undertone & aftertaste with the hopes of making a more versatile hot sauce. Enter: the Chinese Firecracker cayenne pepper.  I was immediately a fan of this pepper. The heat lingers and builds in intensity, and it is both complimentary yet  offers stellar contrast to the flavors of the habanero pepper. 
This cayenne pepper is truly the key to this sauce - the fire-roasted jalapeno and roasted garlic add character and uniqueness, while the habanero packs the punch, but the overall balance and depth of this sauce can be attributed to the Chinese Firecracker. 
I may well feature this pepper in a sauce in the future. For now, I'll just have to keep enjoying it in my Orange Label. I hope you'll do the same.
